# Ingredients:

→ Main Ingredients

01 - 16 oz fresh mushrooms
02 - 6 garlic cloves, finely chopped
03 - 1 teaspoon coarse salt
04 - 2 tbsp butter, split into two portions
05 - 1 tbsp olive oil

→ Seasonings and Sauces

06 - 1/4 teaspoon chili powder
07 - 1/2 teaspoon paprika
08 - 1 1/2 tsp soy sauce
09 - 1/2 teaspoon tarragon, dried
10 - 1 1/2 tsp Worcestershire sauce
11 - 1/2 tsp oregano, dried
12 - 1/2 tsp onion powder
13 - 1/2 tsp black pepper
14 - 1/2 teaspoon optional browning sauce like Gravy Master
15 - Chopped chives for topping

# Steps:

01 - Wipe the mushrooms clean using a wet cloth and snip away any rough stem bits.
02 - In a medium pan, melt 1 tbsp of butter with olive oil over medium heat. Once ready, sprinkle with the salt and toss in the mushrooms. Let them sit undisturbed for 3 minutes to brown nicely.
03 - As the mushrooms brown, mix paprika, onion powder, oregano, tarragon, pepper, and chili powder in a tiny bowl. Add this blend to the pan along with the garlic. Stir well; cook 1–2 minutes till fragrant.
04 - If you're adding browning sauce, toss it in now. Stir for another minute or two. It’ll coat the mushrooms, darken the color, and add a subtle sweetness.
05 - Drizzle in Worcestershire and soy sauce. Mix, letting it simmer for a couple of minutes until the mushrooms soak up most of the liquid. Add the last tbsp of butter at the end to make it silky and shiny.
06 - Right before serving, sprinkle chopped chives on top for a fresh crunch and some color.

# Helpful Notes:

01 - Look for firm, unblemished mushrooms for the best result.
02 - If you prefer, scale back on the garlic to tone down its flavor.
03 - Want an extra kick? Add a splash of white wine before the mushrooms go into the skillet.
