Wipe the mushrooms clean using a wet cloth and snip away any rough stem bits.

In a medium pan, melt 1 tbsp of butter with olive oil over medium heat. Once ready, sprinkle with the salt and toss in the mushrooms. Let them sit undisturbed for 3 minutes to brown nicely.

As the mushrooms brown, mix paprika, onion powder, oregano, tarragon, pepper, and chili powder in a tiny bowl. Add this blend to the pan along with the garlic. Stir well; cook 1–2 minutes till fragrant.

If you're adding browning sauce, toss it in now. Stir for another minute or two. It’ll coat the mushrooms, darken the color, and add a subtle sweetness.

Drizzle in Worcestershire and soy sauce. Mix, letting it simmer for a couple of minutes until the mushrooms soak up most of the liquid. Add the last tbsp of butter at the end to make it silky and shiny.

Right before serving, sprinkle chopped chives on top for a fresh crunch and some color.
