Place the parsley, garlic, onion, sea salt, oregano, paprika, egg, and feta cheese in a small processor and pulse until combined. Add the mixture to the beef mince.

Roll the combined mixture into 20 even-sized meatballs and place them on a plate lined with a paper towel.

Use a mortar and pestle to grind the pine nuts. Roll the meatballs in the ground pine nuts to coat.

Heat a large pan on medium-high heat. Add 2 tablespoons of garlic olive oil. Cook the meatballs in batches until they are browned all over. Place cooked meatballs on a plate lined with a clean paper towel.

Place the Greek yoghurt, grated cucumber, dill, lemon zest, garlic, mint (if using), sun-dried tomatoes, and a splash of garlic olive oil in a clean processor bowl. Pulse until combined.

Add 2 dessert spoonfuls of tzatziki to the bottom of each canapé glass. Thread 2 meatballs onto each skewer and place them in the glasses. Garnish with finely chopped parsley.
