Greek-Inspired Meatballs Sun-dried Tomato Tzatziki (Print Version)

Savoury Greek beef meatballs with feta, served with sun-dried tomato tzatziki and fresh herbs.

# Ingredients:

→ For the Meatballs

01 - 500 g beef mince
02 - 1/2 cup flat-leaf parsley
03 - 2 cloves garlic
04 - 1/2 small onion
05 - 1 tsp sea salt
06 - 2 tsp dried oregano
07 - 1 tsp paprika
08 - 1 egg
09 - 100 g Greek feta cheese
10 - 120 g pine nuts

→ For the Tzatziki

11 - 1 cup Greek yoghurt
12 - 1/2 continental cucumber, grated and moisture squeezed out
13 - 1/2 cup fresh dill
14 - Zest of 1 lemon
15 - 2 cloves garlic
16 - 1/2 cup fresh mint (optional)
17 - 1/2 cup sun-dried tomatoes
18 - Splash of garlic olive oil

# Steps:

01 - Place the parsley, garlic, onion, sea salt, oregano, paprika, egg, and feta cheese in a small processor and pulse until combined. Add the mixture to the beef mince.
02 - Roll the combined mixture into 20 even-sized meatballs and place them on a plate lined with a paper towel.
03 - Use a mortar and pestle to grind the pine nuts. Roll the meatballs in the ground pine nuts to coat.
04 - Heat a large pan on medium-high heat. Add 2 tablespoons of garlic olive oil. Cook the meatballs in batches until they are browned all over. Place cooked meatballs on a plate lined with a clean paper towel.
05 - Place the Greek yoghurt, grated cucumber, dill, lemon zest, garlic, mint (if using), sun-dried tomatoes, and a splash of garlic olive oil in a clean processor bowl. Pulse until combined.
06 - Add 2 dessert spoonfuls of tzatziki to the bottom of each canapé glass. Thread 2 meatballs onto each skewer and place them in the glasses. Garnish with finely chopped parsley.
07 - Serve and enjoy with friends and family.
