Picture this - melty, stretchy cheese combined with juicy blueberries that burst with flavor in every bite. I actually found this pairing by chance while trying to use up extra blueberries after baking. These days my little ones constantly ask for these "special" grilled cheese creations practically every week!

Yesterday evening, my fussy first-grader actually cleaned his plate completely. That's the moment you know you've created something truly fantastic!

What Makes It Special

  • Authentic sourdough bread: - believe me, I switched to regular bread once and it just wasn't nearly as good
  • Just-picked blueberries: - you can use thawed ones if needed, but fresh ones create superior jam
  • Double cheese mixture: because why settle for one? The white cheddar packs the flavor while mozzarella gives you that camera-ready stretch
  • A dash of fancy sea salt: added last minute really brings everything together

Funny thing - I stumbled upon white cheddar being better than yellow when my local store ran out of my go-to cheese. Sometimes the best kitchen discoveries happen by accident!

Let's Make It

Create The Jam:
Simmer those blueberries until they turn thick and luscious. Your house will fill with the most wonderful aroma!
Handle The Cheese:
Shred both cheese types straight from the fridge - much easier on your fingers.
Stack Everything:
Spread the cooled jam and pile on your cheese mix - and yeah, I always sample a bit of cheese during this step. Gotta check it's good, right?
Start Cooking:
Wait for the butter to bubble up nicely in your pan. Don't hurry - I learned this lesson when I turned my first attempt into charcoal!
Take Your Time:
Keep your heat gentle and put a lid on. This is usually when my children start circling the kitchen asking 'Can we eat yet?'
Finish With Flair:
That little bit of sea salt to finish? Total game changer. My partner thought I was nuts the first time, but now he won't eat them without it.

The first time I made these for guests, I got too caught up in conversation and nearly triggered the fire alarm. Lesson learned - these tasty sandwiches need just a bit of your attention!

Kitchen Chronicles

Don't you love recipes that make you feel like a pro? This is definitely mine. Sure, we're talking about 'just' grilled cheese, but whenever I serve these, folks think I've done something truly clever. One of my neighbors even begged for the recipe after her kids couldn't stop talking about them at our summer cookout.

In My Kitchen

These sandwiches are my go-to for relaxed weekend afternoons, particularly during blueberry season. Sometimes I'll even wear my fancy apron while making what's basically dressed-up comfort food.

Sweet Secrets

The jam stays good about a week if you keep it cold - assuming it lasts that long! I've caught my teen eating it straight from the container. Can't really scold him though, since I've done exactly the same thing!

Chef's Real Talk

  • Pick your favorite cheese if you want - but honestly, try my combo at least once
  • Go for a sturdy, heavy pan - my grandmother's old cast iron is absolutely perfect
  • When unsure, turn down the heat. You can always cook longer, but burnt bread can't be fixed

Every time I cook up these sandwiches, I'm reminded that the tastiest food often comes from simple kitchen experiments. Who would've thought blueberries and grilled cheese would work so wonderfully together?

Category: Sweet Stuff

Difficulty: Intermediate

Cuisine: American

Yield: 4 Servings (4 sandwiches)

Dietary: Vegetarian

Ingredients

→ Blueberry Jam

01 1 small bunch of lemon thyme sprigs tied with twine
02 The juice from one lemon
03 1/4 cup white sugar
04 1 pint of fresh blueberries

→ Sandwich Components

05 4 tablespoons of butter
06 8 pieces of sourdough, sliced about 1/4 inch thick
07 A pinch of flaky sea salt for garnish
08 4 oz shredded white cheddar cheese
09 4 oz shredded mozzarella cheese

Instructions

Step 01

In a 2-quart saucepan, toss together the tied thyme, sugar, blueberries, and lemon juice. Let it come to a rolling boil on medium-high heat, then lower the flame and simmer lightly for 10 minutes. Turn the heat even lower and cook for another 10 minutes until it’s thickened up. Take the thyme out and let it cool down.

Step 02

Spread the blueberry jam (once it’s cooled) on half of the bread slices. Add a blend of the mozzarella and cheddar cheeses on top of the jam, then press another bread slice on top to close.

Step 03

Warm 2 tablespoons of butter in a cast iron skillet over medium heat. Place two sandwiches in the pan, cover them, and cook for 2 to 3 minutes on each side until the bread is golden and the cheese melts. If the bread starts browning too fast, lower the heat.

Step 04

Do the same for the rest of the sandwiches using the butter left in the skillet.

Step 05

Slice the sandwiches in half. Sprinkle some flaky sea salt on top, and if you like, add a few leaves of fresh lemon thyme before serving.

Notes

  1. Keep an eye on the heat to avoid burning the bread while waiting for the cheese to melt.
  2. Extra blueberry jam will keep in the fridge for later use.
  3. Combining two cheeses gives an extra gooey texture.
