In a big pan on medium heat, cook the beef till browned. Toss in the onion and garlic, and cook until soft.

Mix in chili powder, cumin, paprika, oregano, salt, and pepper. If adding sauce or salsa, stir it in and let it simmer for a couple of minutes. Add cilantro after removing from heat, if you'd like.

Heat another clean pan on medium. Lay down a tortilla, sprinkle the cheese on one side, add some of the beef mix, then pile on more cheese. Fold it in half.

Toast the tortilla for 2-3 minutes per side. It's done when crispy and golden, and cheese is melted. Repeat for the rest of the tortillas.

Cut into pieces and enjoy warm! You can add toppings like guacamole, sour cream, or salsa.
