Ground Beef Quesadillas (Print Version)

# Ingredients:

→ Filling

01 - 1 small onion, chopped finely
02 - 2 garlic cloves, minced
03 - 1 lb beef, ground
04 - 1 tsp chili powder
05 - ½ tsp paprika, smoked
06 - 1 tsp cumin, ground
07 - ½ tsp oregano
08 - Black pepper and salt, as needed
09 - ¼ cup tomato sauce or salsa (optional)

→ Assembly

10 - 4 large tortillas, flour-based
11 - Butter or oil for the pan
12 - 2 cups shredded cheese (choose cheddar, Monterey Jack, or a mix)
13 - A small handful of chopped fresh cilantro (optional)

# Instructions:

01 - In a big pan on medium heat, cook the beef till browned. Toss in the onion and garlic, and cook until soft.
02 - Mix in chili powder, cumin, paprika, oregano, salt, and pepper. If adding sauce or salsa, stir it in and let it simmer for a couple of minutes. Add cilantro after removing from heat, if you'd like.
03 - Heat another clean pan on medium. Lay down a tortilla, sprinkle the cheese on one side, add some of the beef mix, then pile on more cheese. Fold it in half.
04 - Toast the tortilla for 2-3 minutes per side. It's done when crispy and golden, and cheese is melted. Repeat for the rest of the tortillas.
05 - Cut into pieces and enjoy warm! You can add toppings like guacamole, sour cream, or salsa.
