Herb Lemon Chicken (Print Version)

Chunky chicken pieces soaked in a zesty herb marinade, grilled to juicy perfection. A fast and wholesome meal idea.

# Ingredients:

→ Skewers Ingredients

01 - 2 tablespoons olive oil
02 - 1 pound of skinless, boneless chicken breasts, diced into small 1-inch pieces
03 - 1 teaspoon of thyme, dried
04 - 2 minced garlic cloves
05 - A sprinkle of dried oregano, about 1 teaspoon
06 - Juice from 2 tablespoons worth of fresh lemons
07 - Lemon wedges for squeezing when serving
08 - A pinch of salt and freshly cracked black pepper to taste

# Steps:

01 - Combine oregano, thyme, garlic, olive oil, lemon juice, salt, and pepper in a mixing bowl. Drop the chicken chunks in and mix until they're all coated. Leave it alone for half an hour to soak up the flavors.
02 - Fire up your grill to a medium-high level. As it heats, thread the seasoned chicken pieces onto skewers.
03 - Place the skewers on the hot grill. Let them cook for 8 to 10 minutes. Be sure to turn them every couple of minutes to get that even, slightly charred look.
04 - Put the cooked skewers on a serving plate. Add some fresh lemon wedges for squeezing on top just before eating.

# Helpful Notes:

01 - No grill? No worries. You can use your oven’s broiler to cook these instead.
