Use a paper towel to dry the salmon pieces. Sprinkle them with garlic powder, onion powder, paprika, salt, and pepper. Drizzle on 1 tbsp of olive oil and gently coat each piece.

Warm a skillet with 1 tbsp of oil. Place the salmon chunks in one layer, turning them over often as they cook for 4-5 minutes until crisp and golden brown. Remove the crispy pieces and repeat with the rest.

Using the same pan, pour in the rest of the oil. Toss in the garlic and ginger and lightly cook for a minute. Mix in the soy sauce, honey, and rice vinegar. Let it bubble for 3-5 minutes until it thickens just a bit.

Put the salmon back into the pan and toss everything together until the pieces are well-coated in sauce. Adjust the flavor if needed, then serve hot over steamed rice. Dig in!
