In a large mixing bowl, combine the ground turkey, breadcrumbs, and grated Parmesan cheese. Add the finely chopped onion and minced garlic. Crack the egg into the mixture, pour in soy sauce, and sprinkle in salt, black pepper, oregano, and thyme. Mix until just combined.

Take about 1.5 tablespoons of the mixture and shape into balls approximately the size of a golf ball. Place formed meatballs on a baking sheet lined with parchment paper. Continue until all the mixture is used, forming around 20-24 meatballs.

In a small saucepan, combine honey, ketchup, and apple cider vinegar. Cook over medium heat, stirring continuously, until bubbling (about 2-3 minutes). Reduce heat to low and let it simmer for 5 minutes.

Heat olive oil in a large skillet over medium heat. Add the meatballs in a single layer without overcrowding. Cook for 5-7 minutes, turning occasionally to brown evenly.

Pour the prepared honey garlic sauce over the meatballs in the skillet. Toss gently to coat. Cover, and let simmer for an additional 10-15 minutes or until thoroughly cooked (internal temperature should reach 165°F). Garnish with chopped parsley before serving.
