Set out the items you'll need on a tray (rice, mayo, hot sauce, and 1/2 tbsp of garam masala can be left aside). Warm up the griddle over medium heat.

Heat the oil on your griddle and add the meat, then toss in the onions and carrots. Break the meat into smaller bits while cooking for 4-5 minutes.

Stir in the chutney, cilantro, soy sauce, ginger, garlic, and one tablespoon of garam masala. Keep cooking for another 4-5 minutes.

In a bowl, whisk together the mayo, hot sauce, and the last bit of garam masala.

Spoon the rice into bowls, pile on the meat mixture, and drizzle with your spicy mayo blend.
