Jalapeno Popper Grilled Cheese (Print Version)

A savory blend of bacon, creamy jalapenos, and melted cheese sandwiched between golden grilled bread.

# Ingredients:

01 - 2 jalapenos, sliced lengthwise, seeds and membranes removed
02 - 4 ounces cream cheese
03 - 4 slices bacon, cooked until crispy
04 - 2 slices Monterey Jack cheese
05 - 2 slices sharp cheddar cheese
06 - 4 slices Italian bread
07 - Chopped cilantro (optional)
08 - Pats of butter

# Steps:

01 - Preheat oven to 375°F (190°C).
02 - Stuff each jalapeno half with approximately 1 ounce of cream cheese. Arrange stuffed jalapenos on a baking sheet.
03 - Bake stuffed jalapenos for 25-30 minutes. Remove from oven and allow to cool slightly.
04 - Place 1 slice of sharp cheddar cheese on 2 slices of bread. Place 1 slice of Monterey Jack cheese on the remaining 2 slices of bread.
05 - Slice the cooked stuffed jalapenos into bite-sized pieces. Spread the jalapeno slices over the bread with sharp cheddar. Add the bacon strips to the bread with Monterey Jack.
06 - If desired, sprinkle chopped cilantro over one side of the sandwich assembly.
07 - Carefully combine the slices of bread to form 2 sandwiches.
08 - Spread a few pats of butter on the outside of each sandwich.
09 - Place sandwiches in a skillet over medium-low heat, butter side down. Add more pats of butter on the top side. Grill each side until lightly browned and the cheese is melted and gooey.

# Helpful Notes:

01 - For a spicier sandwich, leave some seeds in the jalapenos.
02 - Grilling on medium-low heat ensures the cheese melts before the bread browns too much.
