Preheat oven to 375°F (190°C).

Stuff each jalapeno half with approximately 1 ounce of cream cheese. Arrange stuffed jalapenos on a baking sheet.

Bake stuffed jalapenos for 25-30 minutes. Remove from oven and allow to cool slightly.

Place 1 slice of sharp cheddar cheese on 2 slices of bread. Place 1 slice of Monterey Jack cheese on the remaining 2 slices of bread.

Slice the cooked stuffed jalapenos into bite-sized pieces. Spread the jalapeno slices over the bread with sharp cheddar. Add the bacon strips to the bread with Monterey Jack.

If desired, sprinkle chopped cilantro over one side of the sandwich assembly.

Carefully combine the slices of bread to form 2 sandwiches.

Spread a few pats of butter on the outside of each sandwich.

Place sandwiches in a skillet over medium-low heat, butter side down. Add more pats of butter on the top side. Grill each side until lightly browned and the cheese is melted and gooey.
