Kale Sausage Broth (Print Version)

A flavorful blend of beans, sausage, and kale in a soothing broth. Great for chilly nights!

# Ingredients:

→ Main Components

01 - 1 pound of Italian sausage, casing removed
02 - 1 minced onion
03 - 1 tablespoon of olive oil
04 - 2 minced garlic cloves

→ Veggies & Beans

05 - 1 can (14 ounces) of rinsed and drained cannellini beans
06 - 1 can (14 ounces) of diced tomatoes
07 - 2 cups chopped fresh kale

→ Broth & Spices

08 - 1 teaspoon of dried thyme
09 - 4 cups of chicken stock
10 - Salt and pepper as needed

# Steps:

01 - In a big pot, warm up olive oil on medium. Break apart the sausage as it cooks for around 5-7 minutes until browned.
02 - Toss in the onion and garlic, and cook for 3-4 minutes until they're soft.
03 - Add beans, kale, chicken broth, tomatoes, thyme, and a pinch of salt and pepper. Bring everything to a steady boil.
04 - Turn the heat down low and let it gently cook for 20-25 minutes. The kale should be tender by then.
05 - Scoop it into bowls and eat it warm.
