Heat a medium saucepan over medium-low heat. Add shredded mozzarella cheese and almond flour. Stir frequently for 5 minutes until the cheese melts and forms a cohesive dough. Let the dough cool slightly.

Insert a wooden stick into each hot dog half and set aside.

Take 1 heaping tablespoon of the prepared dough, press it flat, and wrap around each hot dog. Squeeze tightly to seal the dough.

Line the air fryer basket with parchment paper cut to size. Preheat to 350℉ (180℃).

Arrange the corn dogs in the air fryer basket, working in small batches if necessary. Air fry for 5 to 8 minutes at 350℉ (180℃) until golden brown.
