Creamy yogurt, key lime juice, and crunchy toppings make a cool, protein-rich family snack everyone will love.

# Ingredients:

01 - 2.5 cups plain Greek yogurt, non-fat or low-fat, or dairy-free yogurt alternative
02 - 3.5 tablespoons key lime juice
03 - 2 tablespoons powdered swerve or 1 tablespoon honey, adjust to taste
04 - 1 teaspoon vanilla extract
05 - 1 tablespoon lime zest
06 - 1/3 cup crushed gluten-free graham crackers (e.g., Simple Mills Honey Cinnamon Sweet Thins)
07 - 1/4 cup unsweetened toasted coconut
08 - 1 scoop vanilla protein powder, regular or dairy-free

# Steps:

01 - In a medium mixing bowl, combine Greek yogurt, key lime juice, protein powder, lime zest, powdered swerve (or sweetener of choice), and vanilla extract. Mix until smooth and well combined.
02 - Line a baking sheet with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin, uniform layer.
03 - Sprinkle crushed graham crackers, toasted coconut, and additional lime zest evenly over the yogurt layer.
04 - Place the baking sheet in the freezer for at least 2-3 hours or until the yogurt mixture is fully frozen and set.
05 - Once frozen, remove the baking sheet from the freezer. Lift the parchment paper or silicone mat and break the frozen yogurt bark into pieces. Store in an airtight container in the freezer for up to 2 weeks, layering parchment paper between pieces to prevent sticking.

# Helpful Notes:

01 - Ensure the yogurt bark is fully frozen before breaking into pieces for the best texture.
