Layered Taco Bake (Print Version)

Stacked tortillas, seasoned beef, gooey cheese, and your favorite taco toppings in one delicious dish.

# Ingredients:

→ Filling Mixture

01 - 1 small onion, finely diced
02 - 1 pound ground turkey (or beef)
03 - 2 small garlic cloves, chopped up
04 - 2 tablespoons taco seasoning (or 1 packet)
05 - 1/2 cup of water
06 - 1 cup frozen or canned corn, drained
07 - 1 15-ounce can black beans, rinsed and drained
08 - 1 10-ounce can chopped tomatoes with chilies

→ Layer Ingredients

09 - 2 cups of shredded cheese blend (Mexican-style)
10 - 8 small corn tortillas—or cut 4 large flour tortillas in half
11 - 1/2 cup of optional sour cream

→ Extra Add-Ons

12 - Fresh diced tomatoes
13 - Chopped fresh cilantro
14 - Thinly sliced jalapeños
15 - Ripe avocado slices
16 - Sour cream on top
17 - Any type of salsa

# Steps:

01 - Turn the oven on to 375°F (190°C) to heat up.
02 - Cook the ground turkey and diced onion for about 5-7 minutes. Toss in the garlic, seasoning, and water. Pour in the beans, corn, and tomatoes. Stir everything together.
03 - In a 9x13-inch pan, place some of the tortillas. Add half the meat mix, then a cup of cheese. Do another set of layers. If using sour cream, spread it between the layers.
04 - Cover with foil and bake for 20 minutes. Take off the foil and bake 10 more minutes until the cheese gets bubbly.
05 - Let it sit for 5-10 minutes to cool slightly. Add toppings like cilantro, tomatoes, jalapeños, or avocado if you'd like.

# Helpful Notes:

01 - You can make this ahead of time and chill it for up to a day. Swap out the meat with tofu or extra beans if you prefer vegetarian options.
