Lemon Crumb Bars (Print Version)

Tangy bars with a crumbly top and sweet lemon filling. Simple to make and delightful for snacks, get-togethers, or after dinner.

# Ingredients:

→ Dry Mix

01 - ½ teaspoon baking soda
02 - ½ teaspoon salt
03 - 1¼ cups old-fashioned rolled oats
04 - 1¼ cups all-purpose flour

→ Sugars

05 - ½ cup packed light brown sugar
06 - ½ cup granulated sugar

→ Wet Ingredients

07 - ¾ cup melted unsalted butter
08 - 1 teaspoon vanilla extract

→ Lemon Filling

09 - 2 tablespoons finely grated lemon zest
10 - ½ cup freshly squeezed lemon juice
11 - 1 (14 oz) can sweetened condensed milk
12 - 2 large egg yolks

# Steps:

01 - Set your oven to 350°F (175°C) and give an 8x8-inch baking dish a light coat of baking spray.
02 - Toss together the oats, flour, baking soda, and salt in a big bowl.
03 - Blend in the brown sugar and white sugar.
04 - Pour in the melted butter and vanilla. Mix it all up until it sticks together.
05 - Take half of that mix and press it hard into the base of your prepped pan.
06 - Pop it in the oven and bake for 15 minutes.
07 - While it bakes, whisk the condensed milk with the yolks, lemon zest, and juice until smooth.
08 - Pour the lemon mixture onto the crust once baked. Crumble the rest of the dough over the top evenly.
09 - Bake again for about 20–22 minutes, or until you see a light golden top.
10 - Let it cool completely first, then pop it into the fridge until firm.

# Helpful Notes:

01 - For easier cutting, make sure they’re totally chilled or freeze them a bit.
02 - If you want, you can dip the chilled bars in melted white chocolate and let them harden in the fridge.
