Set your oven to 350°F (175°C) and give an 8x8-inch baking dish a light coat of baking spray.

Toss together the oats, flour, baking soda, and salt in a big bowl.

Blend in the brown sugar and white sugar.

Pour in the melted butter and vanilla. Mix it all up until it sticks together.

Take half of that mix and press it hard into the base of your prepped pan.

Pop it in the oven and bake for 15 minutes.

While it bakes, whisk the condensed milk with the yolks, lemon zest, and juice until smooth.

Pour the lemon mixture onto the crust once baked. Crumble the rest of the dough over the top evenly.

Bake again for about 20–22 minutes, or until you see a light golden top.

Let it cool completely first, then pop it into the fridge until firm.
