Lemon Garlic Cod (Print Version)

# Ingredients:

→ For the Cod Fillets

01 - 4 pieces of cod, each averaging 6 ounces
02 - 2 tablespoons of olive oil
03 - A pinch of salt and a few grinds of pepper, adjusted to your taste

→ For the Garlic Lemon Butter

04 - 4 tablespoons of unsalted butter
05 - 4 garlic cloves, chopped into fine pieces
06 - Juice and grated outer peel of one lemon
07 - 2 tablespoons of chopped fresh parsley leaves

# Instructions:

01 - Set your oven to 400°F (200°C) and either coat a baking tray lightly with oil or use a parchment sheet for lining.
02 - Lay the cod fillets flat on the tray you prepared. Drizzle the olive oil on top and season well with salt and pepper on both sides.
03 - Melt the butter in a small pot over medium heat. Once melted, stir in the minced garlic and let it cook gently for a minute or two, just until you smell it—but don’t let it brown! Take it off the stove and mix in the lemon peel and juice.
04 - Spread the lemon garlic butter you just made over each piece of cod. Sprinkle the chopped parsley evenly on the tops.
05 - Pop the tray into the heated oven and bake for about 12-15 minutes. It’s ready when the fish is completely opaque and flakes easily with a fork.
06 - Serve the fillets straight away, pouring any leftover buttery sauce on them before plating. This dish goes wonderfully with a crispy vegetable side or a bright salad.
