Set your oven to 400°F (200°C) and either coat a baking tray lightly with oil or use a parchment sheet for lining.

Lay the cod fillets flat on the tray you prepared. Drizzle the olive oil on top and season well with salt and pepper on both sides.

Melt the butter in a small pot over medium heat. Once melted, stir in the minced garlic and let it cook gently for a minute or two, just until you smell it—but don’t let it brown! Take it off the stove and mix in the lemon peel and juice.

Spread the lemon garlic butter you just made over each piece of cod. Sprinkle the chopped parsley evenly on the tops.

Pop the tray into the heated oven and bake for about 12-15 minutes. It’s ready when the fish is completely opaque and flakes easily with a fork.

Serve the fillets straight away, pouring any leftover buttery sauce on them before plating. This dish goes wonderfully with a crispy vegetable side or a bright salad.
