Layered Avocado Rice Meal (Print Version)

# Ingredients:

→ For the Chicken

01 - 1 teaspoon grated lime peel
02 - 1 pound chicken breasts, no bones or skin
03 - Salt & black pepper, a pinch or two
04 - 2 tablespoons fresh lime juice
05 - 2 minced garlic cloves
06 - 1/4 cup honey

→ For the Rice

07 - 1/4 cup chopped fresh cilantro
08 - Salt to season as desired
09 - 1 cup cooked brown or white rice
10 - 1 tablespoon of lime juice

→ For the Avocado Layer

11 - A sprinkle of salt & pepper
12 - 1 tablespoon lime juice
13 - 2 ripe avocados, cut into slices

# Instructions:

01 - In a mixing bowl, combine honey, lime juice, lime zest, garlic, and a little salt and pepper. Dunk the chicken in this mixture and let it sit for at least 15 minutes.
02 - Grab a grill or skillet, heat it to about medium-high. Cook the chicken 6–7 minutes per side, until it’s completely done and no pink remains in the center. Take it off the heat and let it hang out for a bit before slicing.
03 - Stir together cooked rice, lime juice, a pinch of salt, and chopped cilantro in a bowl until it’s all blended.
04 - In another bowl, gently mix avocado slices with lime juice, salt, and pepper. This keeps them looking fresh.
05 - Using a plate, layer the cilantro rice at the bottom, followed by sliced chicken, then top it with the avocado. Spoon any extra marinade over the stack if you’d like.
06 - Dig in immediately and enjoy your colorful, flavorful stack of chicken, rice, and avocado!

01 - Want a kick? Toss in red chili flakes or minced jalapeño to the marinade!
02 - Great for meal prepping, this dish works hot or cold.
03 - Bulking up? Add black beans or sweet corn to the rice layer.
