In a mixing bowl, combine honey, lime juice, lime zest, garlic, and a little salt and pepper. Dunk the chicken in this mixture and let it sit for at least 15 minutes.

Grab a grill or skillet, heat it to about medium-high. Cook the chicken 6–7 minutes per side, until it’s completely done and no pink remains in the center. Take it off the heat and let it hang out for a bit before slicing.

Stir together cooked rice, lime juice, a pinch of salt, and chopped cilantro in a bowl until it’s all blended.

In another bowl, gently mix avocado slices with lime juice, salt, and pepper. This keeps them looking fresh.

Using a plate, layer the cilantro rice at the bottom, followed by sliced chicken, then top it with the avocado. Spoon any extra marinade over the stack if you’d like.
