Low-Carb Greek Bowls (Print Version)

Greek-inspired bowls with chicken, veggies, feta, and tzatziki sauce.

# Ingredients:

→ Marinated Chicken

01 - 1 lb diced chicken breast
02 - 3 tbsp olive oil
03 - 2 tbsp fresh lemon juice
04 - 1 tbsp vinegar (red wine)
05 - 1 tbsp seasoning (Greek blend)
06 - 1/4 tsp salt (sea salt)

→ Creamy Tzatziki

07 - 8 oz plain full-fat Greek yogurt
08 - 1/2 grated Persian cucumber
09 - 2 finely grated garlic cloves
10 - 1 lemon, juice and zest
11 - 2 tbsp chopped fresh dill

→ Salad Ingredients

12 - 1 diced Persian cucumber
13 - 1 cup halved cherry tomatoes
14 - 1/2 cup sliced red onion
15 - 1/3 cup pitted Kalamata olives
16 - 4 oz crumbled feta cheese

# Steps:

01 - Toss the chicken pieces with olive oil, vinegar, lemon juice, and the chosen seasonings. Let it sit at least 30 minutes or overnight in the fridge.
02 - Stir yogurt with grated cucumber, garlic, lemon juice, lemon zest, and fresh dill. Chill until it’s ready to be used.
03 - Sear the marinated chicken in a cast-iron pan for about 3-4 minutes on each side until the internal temperature hits 165°F.
04 - Combine vinegar, olive oil, oregano, and a pinch of salt by whisking them together.
05 - Portion the cooked chicken into bowls, arrange the vegetables and feta around it. Finish with the dressing and a dollop of tzatziki.
