Apple Mini Cheesecakes (Print Version)

# Ingredients:

→ Crust

01 - 1/2 teaspoon cinnamon powder
02 - 1 1/2 cups crushed graham crackers
03 - 4 tablespoons butter, melted

→ Cheesecake

04 - 1 egg
05 - 1/2 cup white sugar
06 - 2 tablespoons soft brown sugar
07 - 8 oz cream cheese, softened
08 - 2 teaspoons vanilla essence
09 - 1/2 cup sour cream

→ Apple Topping

10 - 1 tablespoon cornstarch mixed with the same amount of water
11 - 1/2 teaspoon cinnamon powder
12 - 2 cups diced and peeled apples
13 - 1/3 cup water
14 - 1 pinch of salt
15 - 1/2 cup packed brown sugar

# Instructions:

01 - Blend up graham crackers into crumbs. Stir in cinnamon and melted butter. Press the mix into lined muffin cups and pop them into the fridge to set.
02 - Whip the softened cream cheese until creamy. Toss in vanilla, sugars, sour cream, and egg. Keep mixing until it’s smooth.
03 - Spoon filling evenly over the crusts. Bake at 325°F for about 20 minutes. Let cool at room temp for one hour, then refrigerate for another three hours.
04 - Cook peeled apples, water, sugar, salt, and cinnamon until soft. Add the cornstarch mix to thicken it up. Let it cool totally.
05 - Spoon the chilled apple topping onto the cooled cheesecakes.
