In a mixing bowl or jar, add rolled oats, almond milk, chia seeds, cocoa powder, maple syrup, brewed coffee, vanilla extract, and a pinch of salt. Stir until well combined.

Cover the bowl or jar and place it in the refrigerator. Let it sit overnight (or at least 4 hours) to allow the oats to soak and soften.

In the morning, give the oats a good stir. If the mixture is too thick, add a splash of milk to reach your desired consistency. Top with chocolate shavings, cocoa nibs, and fresh berries or banana slices, if desired.
