No-Bake Berry Cheesecake Cups (Print Version)

Cream cheese, berries, jam, and graham cracker crust combine for a quick, refreshing dessert.

# Ingredients:

→ Crust

01 - 8 graham crackers
02 - 4 tablespoons butter, melted
03 - 1/8 cup granulated sugar
04 - 1 tablespoon brown sugar

→ Cheesecake

05 - 8 ounces full-fat cream cheese, softened
06 - Pinch of fresh lemon zest
07 - ¼ teaspoon vanilla extract
08 - 2 ½ tablespoons granulated sugar
09 - 1 cup heavy cream

→ Other Layers

10 - 10 fresh raspberries
11 - 1 cup raspberry jam

# Steps:

01 - Grind graham crackers into fine crumbs using a food processor. Add melted butter, granulated sugar, and brown sugar, then pulse until the mixture is coarse and sandy. Alternatively, crush the crackers in a ziploc bag with a rolling pin, transfer the crumbs to a bowl, and mix in melted butter and sugars.
02 - In a large mixing bowl, combine softened cream cheese, lemon zest, vanilla extract, granulated sugar, and heavy cream. Starting on the lowest speed to prevent splatter, blend thoroughly, scraping down the sides of the bowl as needed, until the mixture becomes thick and stiff.

# Helpful Notes:

01 - Feel free to substitute raspberries and raspberry jam with other fruits like strawberries, blueberries, blackberries, or peaches. Match the fruits with suitable jam for varied flavors.
02 - Use a block of cream cheese for the best texture, avoiding cream cheese spreads.
03 - For a sweeter taste, increase the sugar in the cheesecake mixture or add additional brown sugar in the crust.
