Olive Brine Pasta Bowl (Print Version)

# Ingredients:

→ Main Ingredients

01 - 100g feta cheese, cut into cubes (can swap for blue cheese bits)
02 - 1 cup large green olives, pitted and chopped roughly
03 - 1/2 pound your favorite pasta

→ Dressing

04 - 1/4 cup brine from the olive jar
05 - 1 clove garlic, finely minced
06 - 1/3 cup olive oil (extra virgin)
07 - Black pepper, as much as you'd like
08 - 1 lemon

# Instructions:

01 - Boil water in a big pot, add a pinch of salt, and cook the pasta according to the directions on its packaging. When done, rinse under cold water after draining.
02 - Take a small jar with a lid to prepare the dressing. Pour in olive oil and brine, add the garlic, zest from half the lemon, juice from a quarter of it, and add plenty of black pepper. Pop the lid on and shake it all up until it blends together.
03 - Grab a big mixing bowl and toss together the chilled pasta, feta pieces, and olives. Pour the dressing over it, stir well so everything's coated evenly, and adjust flavors by adding salt, lemon juice, or pepper. Dig in!

# Notes:

01 - Don't heavily salt the pasta water since the feta and brine already bring saltiness.
02 - For best flavor, leave the salad to chill for half an hour before eating.
03 - Store in a sealed container in the fridge, good for 3 days.
