Cranberry Orange Cake (Print Version)

# Ingredients:

01 - 1 tablespoon (10g) orange extract
02 - 3 tablespoons orange zest (from 2-3 oranges)
03 - ½ teaspoon (3g) baking soda
04 - 1 teaspoon (4g) vanilla extract
05 - 2 sticks (226g) unsalted butter, softened just slightly
06 - ⅓ cup fresh orange juice (from 1 medium orange)
07 - 1½ teaspoons (7g) baking powder
08 - 1 cup (90g) cranberries, trimmed and sliced
09 - 3 large eggs, at room temperature
10 - ½ teaspoon (3g) salt
11 - 2 cups (400g) sugar
12 - 3 cups (342g) cake flour
13 - 1 cup (242g) sour cream

→ Cranberry Filling

14 - ¾ cup (150g) sugar
15 - 1½ cups (180g) cranberries, fresh or frozen
16 - ¾ cup (180g) water

→ Orange Cream Cheese Frosting

17 - ½ teaspoon (2g) salt
18 - 3 sticks (339g) unsalted butter, at room temperature
19 - 1 teaspoon (4g) vanilla extract
20 - 16 oz (452g) full-fat cream cheese
21 - 7 cups (805g) powdered sugar
22 - 1 teaspoon (4g) orange extract

# Instructions:

01 - Heat oven to 350°F. Butter and flour three 8-inch round pans. Wash and cut the cranberries.
02 - In a medium-sized bowl, mix together the flour, salt, baking soda, and baking powder.
03 - In another bowl, stir together orange juice, orange zest, sour cream, and both extracts (vanilla and orange).
04 - Use a mixer to cream the softened butter and sugar until fluffy. Add eggs one at a time, beating between each. Slowly alternate adding the wet and dry mixes. Gently mix in the cranberries.
05 - Pour the batter evenly into the pans. Place in the oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
06 - In a saucepan, cook the cranberries, water, and sugar over medium heat until the berries burst and the mixture thickens. Let it cool completely.
07 - Whip the butter till it's smooth. Add in the cream cheese and mix. Stir in the extracts and salt, then slowly add the powdered sugar, beating until everything is creamy and smooth.

# Notes:

01 - Replace cake flour by combining regular flour and a bit of cornstarch.
02 - Orange gelatin powder works as a swap for orange extract.
03 - If you'd like, this will create about 28 cupcakes instead of a large cake.
