Oven Fried Pizza Lamb Onions (Print Version)

# Ingredients:

→ Pizza Base

01 - 2 1/4 teaspoons active dry yeast
02 - 1 1/2 cups warm water (about 110 degrees Fahrenheit)
03 - 3 1/2 cups all-purpose flour
04 - 2 teaspoons kosher salt
05 - 1/2 teaspoon ground white pepper
06 - 1 scant tablespoon honey
07 - 1 tablespoon extra-virgin olive oil
08 - Additional olive oil for coating and greasing trays

09 - 12 ounces spicy lamb sausage, casings removed
10 - 2 small red onions, peeled and thinly sliced
11 - 1/2 teaspoon honey
12 - 1 cup mozzarella cheese, cubed
13 - 1/2 cup fresh basil leaves, stemmed, washed, and dried
14 - 8 tablespoons olive oil

# Steps:

01 - Combine yeast and warm water in a large bowl. Stir to dissolve and rest for 5 minutes. Sift half of the flour over the mixture and blend until smooth. Add salt, pepper, honey, and mix. Sift in remaining flour and mix to blend. Knead dough on a floured surface for 3 to 5 minutes. Place dough in an oiled bowl, cover with plastic wrap, and let rest in a warm place for 1 1/2 hours until doubled. Divide the dough into 4 portions, roll into balls, and rest covered for 15 minutes. Flatten into 6-inch rounds and place on greased baking sheets.
02 - Heat olive oil in a skillet over high heat. Cook sausage, breaking it into small pieces until golden brown. Remove sausage with a slotted spoon onto a paper-towel-lined plate. Add onions to the pan and cook over medium heat for 3 to 5 minutes until caramelized. Stir in honey.
03 - Preheat oven to 350°F (175°C). Heat olive oil in a cast-iron skillet. Add a pizza dough round, pressing gently with a spatula to keep it flat. Cook until slightly browned underneath. Season with salt, pepper, and flip. Add sausage-onion mixture, mozzarella, and basil to the cooked dough. Place the skillet in the oven and cook for 5 to 8 minutes. Repeat for remaining dough rounds.
