Combine sugar, yeast, salt, and flour in a bowl. Pour in the water and oil, then stir to make a rough ball.

Knead for 3 minutes with a mixer or about 5 minutes by hand. Allow it to rest and puff up for 15 minutes.

Heat oven to 450°F. Coat a large sheet pan (18x13-inch) generously with oil.

Roll out the dough until it's very thin, around ⅛ inch. Layer on the sauce, mozzarella, and pepperoni.

Bake for 10-12 minutes until the crust is lightly brown and the cheese is bubbly. Let cool 5 minutes and sprinkle parmesan on top.
