Boil the penne until it's firm but not mushy. Save 1/2 cup of the pasta water before draining.

Toss diced chicken with seasoning and cook in oil for 5-7 minutes, until browned.

Mix marinara, parmesan, seasonings, reserved water, and pasta into the pan. Let it simmer for 4-5 minutes.

Cover the dish with mozzarella on top. Leave it alone for 5 minutes to melt.
