Peach & Cream Tarts (Print Version)

Buttery crust packed with creamy filling and fresh peaches, all finished with a drizzle of honey and warm spices.

# Ingredients:

→ Crust

01 - 1 tablespoon heavy cream for brushing
02 - Cinnamon sugar to sprinkle on top
03 - 4 tablespoons unsalted butter, grated or diced, and kept cold
04 - 3-4 tablespoons ice water, chilled
05 - 2 teaspoons granulated sugar
06 - ¼ teaspoon white vinegar, distilled
07 - ¾ cup + 2 tablespoons all-purpose flour
08 - ¼ teaspoon salt

→ Filling

09 - 3-4 ounces softened cream cheese
10 - 1 peach, partly sliced

→ Honey Topping

11 - ⅛ teaspoon ginger, ground
12 - ⅛ teaspoon cinnamon, ground
13 - 1 teaspoon fresh lemon juice
14 - 2 tablespoons honey

# Steps:

01 - Mix butter into the flour until it looks like little peas. Stir in icy water with vinegar to form a dough. Wrap it up and place it in the fridge to chill for 30 minutes.
02 - Roll the dough into a rectangle, fold into thirds like a letter, and roll again. Repeat once, then make it a 9x9-inch square and slice into 4 portions.
03 - Slice cream cheese and peach. Combine honey topping ingredients in a little bowl.
04 - Raise the edges of the dough squares. Add cream cheese, peaches, and honey topping. Brush the borders with cream and sprinkle cinnamon sugar over them.
05 - Pop into a 425°F oven for 18-22 minutes, until golden and crisp. Let them cool off for a bit on a rack.
06 - Finish with extra honey mixture on top and enjoy while warm.
