Tangy Pepper Onion Relish (Print Version)

A sweet and zesty mix of peppers and onions, perfect for adding flair to hot dogs, burgers, and more.

# Ingredients:

→ Vegetables

01 - 2 big onions, sliced into thin half-moon shapes
02 - 4 cups of thinly sliced mixed bell peppers

→ Pickling Liquid

03 - 1 cup apple cider vinegar
04 - 1 cup white vinegar
05 - 1 cup regular sugar

→ Spices & Seasonings

06 - 1 teaspoon of celery seeds
07 - 1 teaspoon ground turmeric
08 - 1 tablespoon mustard seeds, whole
09 - 1/2 teaspoon of crushed red pepper flakes (optional if you'd rather skip the heat)
10 - 1/2 teaspoon freshly ground black pepper
11 - 1 teaspoon of salt

# Steps:

01 - Take a large bowl and throw in those slices of peppers and onions. Stir everything around until it's mixed well.
02 - In a saucepan, combine both kinds of vinegar with sugar, salt, turmeric, mustard seeds, celery seeds, black pepper, and the red pepper flakes if you'd like some spice.
03 - Place the pan on medium heat and let things come to a gentle boil. Keep stirring now and then until all the sugar vanishes into the mix.
04 - Pour that hot mixture right over your bowl of prepared veggies. Use a spoon to stir, making sure each piece is coated well with liquid.
05 - Wait for your mixture to cool completely before scooping it into jars or storage containers with a snug lid.
06 - Stick those jars in the fridge and leave them for at least a day. A little patience gives the flavors time to blend beautifully.
