Philly Cheese Steak Sloppy Joes (Print Version)

Sautéed beef, peppers, and gooey cheese come together on golden hoagie rolls for a comforting sandwich.

# Ingredients:

01 - 1 lb thinly sliced ribeye or sirloin, finely chopped (or 1 lb ground beef)
02 - 2 tbsp vegetable oil or butter, plus extra for toasting buns
03 - 1 medium yellow onion, finely chopped
04 - 1 medium green bell pepper, finely chopped
05 - 8 oz cremini or button mushrooms, sliced (optional)
06 - 2 cloves garlic, minced
07 - 1/4 cup ketchup
08 - 2 tbsp tomato paste
09 - 1/2 cup beef broth
10 - 1 tbsp Worcestershire sauce
11 - 1 tsp Dijon mustard
12 - 1 tbsp packed light brown sugar (optional)
13 - 1/2 tsp kosher salt, plus more to taste
14 - 1/4 tsp freshly ground black pepper
15 - 1/4 tsp crushed red pepper flakes (optional)
16 - 6 to 8 slices provolone or American cheese (or 1 cup shredded Cheddar or 1 cup Cheez Whiz)
17 - 4 to 6 hoagie rolls or sturdy burger buns
18 - 2 tbsp unsalted butter, softened for toasting buns

19 - 1 cup (2 sticks) unsalted butter, softened
20 - 3/4 cup granulated sugar
21 - 3/4 cup packed light brown sugar
22 - 2 large eggs, room temperature
23 - 2 tsp pure vanilla extract
24 - 2 1/4 cups all purpose flour
25 - 1 tsp baking soda
26 - 1 tsp kosher salt
27 - 2 cups semisweet chocolate chips
28 - 1 cup chopped nuts like walnuts or pecans (optional)
29 - Vanilla ice cream for serving (optional)

# Steps:

01 - Finely chop the ribeye or sirloin, or use ground beef. Chop onion, bell pepper, mushrooms, mince garlic, and set out butter and oil for cooking. Preheat the oven to 350°F if warming rolls there.
02 - Heat a large skillet over medium-high heat, add oil or butter, and cook the beef seasoned with salt and pepper until mostly browned. Drain excess fat, if necessary, leaving some for flavor.
03 - Push meat to the side of the skillet and add onion, bell pepper, and mushrooms. Sauté until softened for 5 to 7 minutes, then stir in minced garlic and cook for 30 to 60 seconds until fragrant.
04 - Mix in ketchup, tomato paste, beef broth, Worcestershire sauce, Dijon mustard, brown sugar, and red pepper flakes if using. Simmer and thicken the sauce for 5 to 8 minutes, adjusting salt and pepper as needed.
05 - Lower the heat, add cheese on top of the meat mixture to melt, or stir in shredded cheese as desired.
06 - Spread softened butter on the cut sides of buns and toast in a pan or under the broiler until golden brown.
07 - Pile the cheesy meat mixture onto the toasted buns, press gently to hold the filling, and serve hot.
08 - Preheat oven to 350°F. In a bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes. Beat in eggs one at a time, then vanilla extract.
09 - Whisk together flour, baking soda, and salt. Gradually mix dry ingredients into the wet until combined. Fold in chocolate chips and optional nuts. Scoop dough onto parchment-lined baking sheets. Bake 9 to 12 minutes until edges are set and centers slightly underdone. Cool before serving.
