Heat your oven to 350°F. Line a 9×13 pan with some parchment paper.

Combine flour, sugar, and salt in a bowl. Work in the cold butter until crumbly. Evenly press this into the lined baking pan.

Pop the crust into the oven and bake for 15 minutes, or until it has a light golden hue. Give it a few minutes to cool after.

Beat the eggs and sugar in a bowl until it’s nice and smooth. Stir in the flour, baking powder, and vanilla. Gently fold in the pineapple that’s been drained.

Pour the pineapple mixture over the slightly cooled crust. Bake for around 25-30 minutes until the edges are no longer jiggly.

Let the bars cool fully in the pan. Once chilled, sprinkle powdered sugar generously over the top and cut into squares.
