Tropical Bliss Bars (Print Version)

# Ingredients:

→ For the Crust Base

01 - 3/4 cup butter, cold and cut into cubes
02 - 1 1/2 cups plain flour
03 - 1/2 cup white sugar
04 - A pinch of salt

→ For the Pineapple Layer

05 - 1 tsp vanilla flavoring
06 - 1/2 tsp leavening agent (baking powder)
07 - 1 cup white sugar
08 - 1/4 cup all-purpose flour
09 - 2 eggs - large
10 - 1 cup crushed pineapple, drained thoroughly

→ Toppings

11 - Confectioners’ sugar for finishing

# Instructions:

01 - Heat your oven to 350°F. Line a 9×13 pan with some parchment paper.
02 - Combine flour, sugar, and salt in a bowl. Work in the cold butter until crumbly. Evenly press this into the lined baking pan.
03 - Pop the crust into the oven and bake for 15 minutes, or until it has a light golden hue. Give it a few minutes to cool after.
04 - Beat the eggs and sugar in a bowl until it’s nice and smooth. Stir in the flour, baking powder, and vanilla. Gently fold in the pineapple that’s been drained.
05 - Pour the pineapple mixture over the slightly cooled crust. Bake for around 25-30 minutes until the edges are no longer jiggly.
06 - Let the bars cool fully in the pan. Once chilled, sprinkle powdered sugar generously over the top and cut into squares.

# Notes:

01 - Want a tropical twist? Stir in 1/2 cup shredded coconut to the pineapple layer.
02 - Feel free to decorate with toasted coconut or small pineapple pieces.
03 - The treats last up to 5 days in the fridge. Let them warm up to room temp before serving.
