One Pot Pizza Pasta (Print Version)

Sausage, veggies, and cheese come together for a pizza-flavored one-pot pasta meal—in just half an hour.

# Ingredients:

→ Essential Ingredients

01 - ½ lb. pasta like rotini or penne
02 - ½ lb. sausage, mild or hot, casings removed
03 - 1 ½ cups shredded mozzarella cheese

→ Veggies

04 - 1 bell pepper, chopped
05 - ½ medium onion, finely chopped
06 - 2 minced garlic cloves
07 - 8 oz sliced mushrooms, any variety

→ Flavors & Sauce

08 - 2 ½ cups chicken stock
09 - 4 oz tomato paste (roughly ⅓ cup)
10 - ½ tsp crushed red chili flakes (optional)
11 - 1 ½ tsp dried oregano

→ Topping Ideas

12 - Grated parmesan (optional)

# Steps:

01 - Heat a Dutch oven over medium heat and toss in the sausage. Break it apart into smaller chunks while it browns.
02 - As soon as the sausage is cooked through, throw in the peppers, mushrooms, and onion. Let them soften for about 5 minutes.
03 - Mix in the tomato paste, oregano, garlic, and chili flakes. Stir until the tomato paste coats everything well. Let the spices bloom for around a minute.
04 - Pour in the broth and pasta. Turn the heat higher to get it boiling, then reduce to medium-low. Cover with a lid and cook for 14–16 minutes, stirring now and then, until the pasta is tender and most of the liquid turns saucy. Add a splash of broth or water if needed.
05 - Turn off the heat, stir in the mozzarella, and season with a bit of salt. Sprinkle extra parmesan or chili flakes, if you'd like.
