Salmon with Avocado & Feta (Print Version)

# Ingredients:

→ Salmon

01 - 4 boneless salmon portions
02 - 1 teaspoon grated lemon peel
03 - A sprinkle of paprika
04 - 2 spoons of freshly squeezed lemon juice
05 - Salt, as much as you'd like
06 - 2 tablespoons of olive oil
07 - Black pepper, to your taste
08 - 1 teaspoon of fresh dill, finely chopped

→ Avocado Topping with Feta

09 - 1 diced large avocado
10 - ⅓ cup of crumbled feta cheese
11 - Juice from half of a lemon
12 - Salt and pepper, based on your preference
13 - A tablespoon of dill, chopped up
14 - A tablespoon of chives, thinly sliced

# Instructions:

01 - Turn the oven on to 400°F and spray down your baking dish with cooking spray.
02 - Combine the chives, lemon juice, avocado, dill, feta, salt, and black pepper in a bowl. Cover and keep chilled.
03 - Dry off the salmon and lay it in the dish. Mix together the oil, zest, juice, and dill; coat the portions with it. Add some paprika, pepper, and salt.
04 - Pop it in the oven and bake for 10-12 minutes, until the fish is flaky when tested with a fork.
05 - Dish it up right away with a bit of the avocado topping spooned over each piece.
