Cinnamon Cookie Bars (Print Version)

Buttery, tender cookie bars with a cinnamon-sugar twist. Just the right pick for any gathering, bake sale, or quick sweet bite during the week.

# Ingredients:

→ For the Cookie Bars

01 - 2 2/3 cups plain flour
02 - 1 teaspoon of table salt
03 - 2 teaspoons of baking powder
04 - 1 cup of softened butter
05 - 1 3/4 cups of white sugar
06 - 2 large eggs
07 - 1 tablespoon of vanilla essence

→ For the Cinnamon Sugar Topping

08 - 2 teaspoons of ground cinnamon
09 - 2 tablespoons white sugar

# Steps:

01 - Turn your oven to 350°F (175°C) to preheat. Lightly coat a 9x13-inch pan with butter or non-stick spray.
02 - In a mixing bowl, stir together flour, salt, and baking powder thoroughly.
03 - Use a large bowl to mix your softened butter with 1 3/4 cups of sugar. Beat them until the mixture is pale and fluffy, around 2 to 3 minutes.
04 - Crack in the eggs one by one, making sure the first egg is fully blended before adding the next. Then stir in the vanilla.
05 - Slowly add the dry ingredients to the wet ones. Stir gently until everything is just combined—don’t overdo it!
06 - Pour the batter into the greased pan and spread it evenly. Smooth the surface out with a spatula.
07 - In a small dish, combine the cinnamon and sugar for the topping. Scatter the mix evenly across the batter.
08 - Bake for 25–30 minutes, or until you see a golden edge and a toothpick comes out clean or with just a few crumbs.
09 - Let the pan cool down fully before you cut the bars into squares. Then, enjoy!

01 - Keep the bars fresh by storing them in a sealed container at room temperature; they’ll stay good for five days.
02 - Want an extra kick of flavor? Stir in 1/4 teaspoon of nutmeg with the cinnamon topping.
