Jalapeno Chicken Burger (Print Version)

Spicy chicken burgers mixed with jalapenos, melty pepper jack, and tangy garlic mayo. Great for barbecues or quick dinners.

# Ingredients:

01 - 2 pounds of freshly ground chicken.
02 - 4 garlic cloves, finely chopped.
03 - Half an onion, diced small.
04 - 1-2 jalapenos, deseeded and chopped.
05 - 2 teaspoons of paprika.
06 - 1 teaspoon kosher salt.
07 - 1/2 teaspoon freshly cracked black pepper.
08 - 3/4 cup of shredded pepper jack cheese.
09 - 1/2 cup of chopped fresh cilantro.
10 - Oil for cooking (olive or vegetable).
11 - 8 slices of American or white cheddar cheese.
12 - 8 fresh hamburger buns.
13 - 1 whole garlic bulb for roasting.
14 - 1/3 cup of mayonnaise.
15 - 2 large, ripe avocados.
16 - Juice from 1 fresh lime.
17 - 2 tablespoons of chopped cilantro for guacamole.

# Steps:

01 - Drizzle a garlic head with olive oil, wrap in foil, and roast at 400°F for 40 minutes until soft. Squeeze out the roasted garlic and combine with mayo, salt, and pepper.
02 - Use a fork to mash the avocados in a bowl. Stir in lime juice, cilantro, salt, and pepper until smooth and mixed well.
03 - Mix ground chicken with garlic, onions, jalapenos, spices, cilantro, and cheese. Shape into 8 burger patties of equal size.
04 - Oil the grill and cook patties for about 8 minutes per side. Place cheese slices on top in the final minutes to melt.
05 - Lightly toast the buns. Spread garlic mayo on each, add a cooked patty with melted cheese, and spoon guacamole on top.

01 - Swap ground chicken for turkey if you'd like.
02 - Pan-fry in olive oil for 7-8 minutes on one side, then 5-6 on the other.
03 - Garlic mayo stays fresh in the fridge for up to 5 days.
