Spicy Creamy Soup (Print Version)

A rich and spicy potato soup loaded with sausage and seasonings.

# Ingredients:

→ Sausage

01 - 1 andouille sausage ring (13.5 ounces)
02 - 1 spoonful of vegetable oil

→ Vegetables

03 - 4 big russet potatoes, peeled and cut into chunks
04 - 1 large diced onion
05 - 1/2 cup of chopped celery
06 - 2 teaspoons of garlic that’s been minced
07 - 1/2 of a red bell pepper, diced

→ Seasonings and Liquids

08 - 1/4 teaspoon of cayenne pepper
09 - 1 cup of mild shredded cheddar
10 - 1 teaspoon of Cajun spices
11 - 4 cups of chicken broth
12 - 1/2 cup of heavy cream
13 - 1/2 teaspoon of paprika powder
14 - 1/2 teaspoon of kosher-style salt
15 - 1/2 teaspoon of ground black pepper

# Steps:

01 - Heat oil, toss in sausage slices, and brown for a few minutes. Take them out once done.
02 - In the same pot, soften your onion, celery, and red pepper. Stir in garlic for a few seconds.
03 - Add cubed potatoes, Cajun spices, and all the liquids to the pot. Let it simmer until potatoes are soft, about 20 minutes.
04 - Stir the cooked sausage back in, toss in cheese and cream, then heat it all until the cheese melts.
