Strawberry Earthquake Cake (Print Version)

Light and flavorful strawberry dessert with cream cheese swirls and fresh glaze. A crowd-pleaser for any special day.

# Ingredients:

→ Cake Layer

01 - 1 boxed strawberry cake mix (and needed ingredients listed on package)

→ Cheesecake Swirl

02 - 8 ounces of softened cream cheese
03 - 1/2 cup of powdered sugar
04 - 1 teaspoon of vanilla

→ Berry Topping

05 - 1 cup of fresh mashed strawberries
06 - 1/3 cup of white sugar
07 - 1 tablespoon of lemon juice
08 - 1 teaspoon of cornstarch mixed with 1 tablespoon of water

→ Toppings

09 - Sliced fresh strawberries
10 - White chocolate to drizzle

# Steps:

01 - Set the oven to 350°F (175°C) and grease a baking pan, 9x13 in size. Prepare the cake mix as instructed on the package and empty it into the pan.
02 - Mix cream cheese, sugar, and vanilla until creamy. Spoon over cake batter and use a knife to gently create swirls.
03 - Bake for about 30 to 35 minutes, or until you can pierce it with a toothpick and it comes out clean. Leave it to cool before moving on.
04 - Heat mashed strawberries, lemon juice, and sugar until bubbling. Stir in the cornstarch-water mix and cook till it gets thicker. Set aside to cool.
05 - Once the glaze is at room temperature, pour it on top of the cake. Add fresh strawberry slices and white chocolate drizzle if you'd like.

# Helpful Notes:

01 - Thawed frozen strawberries will work just fine—mash them like fresh ones.
02 - For more zing, sprinkle in some grated lemon peel while making the glaze.
03 - Strain the mashed strawberries to make the glaze silky smooth.
