Strawberry Cinnamon Treats (Print Version)

# Ingredients:

→ Dough

01 - 1/2 teaspoon salt
02 - 1/2 teaspoon vanilla extract
03 - 1 large egg
04 - 1/4 cup (60g) softened unsalted butter
05 - 1/4 cup (50g) granulated sugar
06 - 2 1/4 teaspoons (7g) active dry yeast
07 - 1/2 cup (120ml) lukewarm whole milk
08 - 2 cups (240g) all-purpose flour

→ Cheesecake Filling

09 - 1/2 cup (120ml) sour cream or Greek yogurt
10 - 1 tablespoon all-purpose flour
11 - 1 teaspoon vanilla extract
12 - 1/4 cup (50g) granulated sugar
13 - 8 oz (225g) softened cream cheese

→ Cinnamon Sugar Filling

14 - 1/4 cup (60g) softened unsalted butter
15 - 1/4 teaspoon salt
16 - 2 tablespoons ground cinnamon
17 - 1/2 cup (100g) packed brown sugar

→ Strawberry Topping

18 - 1 tablespoon sugar (optional)
19 - 1 cup (150g) fresh strawberries, hulled and sliced

→ Cream Cheese Icing

20 - Pinch of salt
21 - 1-2 tablespoons whole milk
22 - 1/4 teaspoon vanilla extract
23 - 1/2 cup (60g) powdered sugar
24 - 4 oz (115g) softened cream cheese

# Instructions:

01 - Mix the yeast with warm milk in a little bowl. Stir well, then leave it alone for about 5-10 minutes until it's bubbly.
02 - Put flour, sugar, and salt in a big bowl. Make a little hole in the middle for adding the butter, egg, vanilla, and yeast mixture. Stir it up and knead by hand for 8-10 minutes until the dough feels smooth.
03 - Shape the dough into a ball, oil up a bowl, and place it inside. Cover and keep it somewhere cozy for an hour or so, until it looks twice as big.
04 - For your cheesecake mix, whisk the cream cheese by itself until creamy. Add sour cream, sugar, vanilla, and flour and stir together. For the cinnamon sugar mix, toss brown sugar, cinnamon, and salt in a bowl.
05 - Flatten the dough into a 16x12-inch sheet. Spread on butter, then add the cheesecake filling and cinnamon sugar mix. Roll it up from the longer side. Slice into 12 pieces.
06 - Set the rolls in an oiled 9x13-inch pan. Cover them and let them fluff up for 30-45 minutes. Bake at 350°F (175°C) for 25-30 minutes, until they look lightly browned on top.
07 - Once the rolls have cooled for 10 minutes, whip up your cream cheese icing and spread it over the top. Add strawberries, sweetened with sugar if you'd like.

# Notes:

01 - It might take 1-1.5 hours for the first rise, depending on how warm or cold your kitchen is.
02 - Softening the dairy first makes mixing much easier, so don’t skip it.
03 - You can store unbaked rolls in the freezer, then thaw them in the fridge before you bake.
04 - If strawberries aren’t your thing, swap them out for any berries or fruit you like.
