Strawberry Chocolate Swirl (Print Version)

# Ingredients:

→ Crust

01 - 6 tablespoons melted unsalted butter
02 - 2 cups of crushed chocolate cookies (roughly 20 cookies)

→ Cheesecake Filling

03 - 1 cup sugar (granulated)
04 - 3 blocks of cream cheese, each 8 ounces (softened)
05 - Half a cup of sour cream
06 - 1 teaspoon pure vanilla
07 - 3 eggs, large
08 - 1 cup sliced, fresh strawberries
09 - ½ cup of melted chocolate or chocolate sauce

→ Topping

10 - 8-10 whole or halved strawberries
11 - ½ cup of glossy chocolate ganache

# Instructions:

01 - Combine the butter and cookie crumbs well, then press them into a springform pan (9-inch). Bake for 8 minutes at 325°F.
02 - Whip the cream cheese and sugar together, then add an egg, beat, and repeat till all eggs are mixed in. Then, stir in sour cream and vanilla until smooth.
03 - Pour a layer of batter onto the crust, layer strawberries and chocolate, then cover with the rest of the batter. Use a knife to create swirls.
04 - Set the pan in a water bath to help keep it even. Bake for 60-70 minutes till edges are firm. Let it cool for an hour in the switched-off oven, then chill it for 4 hours in the fridge.
05 - Finish it off by adding ganache to the top and garnishing with fresh strawberries.

# Notes:

01 - You can swap sour cream with Greek yogurt. Using a water bath reduces cracking, but you can skip it if needed.
