Set your oven to 375°F (190°C) and boil water to cook the shells until they're almost done.

Heat olive oil in a pan, sauté garlic, then cook spinach down until soft. Season lightly with salt and pepper.

In a bowl, mix ricotta, parmesan, mozzarella, the beaten egg, optional nutmeg, and the spinach from the pan.

Spread marinara in a baking dish. Fill shells with the cheese mix, lay them in, and pour more sauce and leftover cheese on top.

Cover with foil, bake for 25 minutes, then bake uncovered another 10 minutes. Sprinkle herbs on top.
