Stuffed Spinach Cheese Shells (Print Version)

# Ingredients:

→ Pasta

01 - 12 large shells of pasta

→ Cheese Mixture

02 - 1 cup shredded mozzarella (plus some extra for topping)
03 - 1½ cups creamy ricotta
04 - ½ cup grated parmesan
05 - 1 egg, size large
06 - A pinch of nutmeg (optional)

→ Veggies and Flavorings

07 - 1 tablespoon olive oil
08 - 2 cloves of garlic, minced
09 - 1 cup fresh chopped spinach (or ½ cup thawed and drained frozen spinach)

→ Sauce and Extras

10 - 2 cups of marinara sauce
11 - Fresh parsley or basil for topping
12 - Salt and black pepper as needed

# Instructions:

01 - Set your oven to 375°F (190°C) and boil water to cook the shells until they're almost done.
02 - Heat olive oil in a pan, sauté garlic, then cook spinach down until soft. Season lightly with salt and pepper.
03 - In a bowl, mix ricotta, parmesan, mozzarella, the beaten egg, optional nutmeg, and the spinach from the pan.
04 - Spread marinara in a baking dish. Fill shells with the cheese mix, lay them in, and pour more sauce and leftover cheese on top.
05 - Cover with foil, bake for 25 minutes, then bake uncovered another 10 minutes. Sprinkle herbs on top.

01 - Want more kick? Use red chili flakes. Perfect match with salad or garlic bread!
