Texas Twinkies Brisket Jalapenos (Print Version)

Jalapenos stuffed with brisket and cheese, wrapped in bacon, and brushed with BBQ sauce for a savory bite.

# Ingredients:

01 - 12 large jalapeños
02 - 8 ounces cream cheese, softened
03 - 4 ounces cheddar cheese, shredded
04 - 2 cups finely chopped leftover beef brisket
05 - ½ tablespoon chili powder
06 - 12 slices bacon
07 - ¼ cup BBQ sauce

# Steps:

01 - Preheat the oven to 400°F. Place a wire rack on top of a rimmed baking sheet, spray with nonstick spray, and set aside.
02 - Slice the top off of the jalapeños and carefully remove the seeds inside. Use gloves when handling jalapeños.
03 - Combine softened cream cheese, shredded cheddar cheese, brisket, and chili powder in a bowl. Mix thoroughly.
04 - Transfer the mixture to a gallon-sized ziplock bag, cut off the corner, and use it as a piping bag to fill each jalapeño with the mixture.
05 - Wrap each stuffed jalapeño with a slice of bacon.
06 - Place the bacon-wrapped jalapeños onto the prepared wire rack-lined baking sheet and bake them on the center rack for 10 minutes.
07 - Turn the jalapeños over and bake for another 10 minutes.
08 - Remove the jalapeños from the oven and brush them with BBQ sauce. Turn the broiler on low.
09 - Place the jalapeños 6 inches under the broiler for 2 minutes, watching carefully to prevent burning. Remove from the oven and let cool before serving.
