Tilapia in Roasted Pepper Sauce (Print Version)

Succulent tilapia fillets simmer in creamy roasted pepper sauce for an effortless, delicious dinner.

# Ingredients:

01 - 1 lb tilapia fillets
02 - 3 tbsp butter
03 - 1 medium onion, diced
04 - 2 garlic cloves, minced
05 - 6 oz roasted peppers, chopped
06 - 6 oz roasted peppers, pureed
07 - ¾ cup heavy cream
08 - ½ cup grated Parmesan cheese
09 - Salt and pepper to taste
10 - Chopped parsley for garnish

# Steps:

01 - Melt 2 tablespoons of butter in a large, non-stick skillet and fry the fish for 3-4 minutes on each side until cooked through. Season with salt and pepper, remove from the skillet, and set aside.
02 - In the same skillet, add the remaining 1 tablespoon of butter and diced onion. Sauté for 5 minutes until softened.
03 - Add minced garlic, chopped roasted peppers, and pureed roasted peppers to the skillet. Cook for another 5 minutes.
04 - Stir in heavy cream and Parmesan cheese. Turn off the heat and taste the sauce, adjusting salt as needed.
05 - Return the fish to the skillet and cover with the sauce.
06 - Garnish with chopped parsley and additional Parmesan cheese. Serve immediately.
