Melt 2 tablespoons of butter in a large, non-stick skillet and fry the fish for 3-4 minutes on each side until cooked through. Season with salt and pepper, remove from the skillet, and set aside.

In the same skillet, add the remaining 1 tablespoon of butter and diced onion. Sauté for 5 minutes until softened.

Add minced garlic, chopped roasted peppers, and pureed roasted peppers to the skillet. Cook for another 5 minutes.

Stir in heavy cream and Parmesan cheese. Turn off the heat and taste the sauce, adjusting salt as needed.

Return the fish to the skillet and cover with the sauce.

Garnish with chopped parsley and additional Parmesan cheese. Serve immediately.
