In a bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes, until frothy.

In a large mixing bowl, combine flour and salt. Add the yeast mixture, eggs, vanilla extract, and melted butter. Stir until a sticky dough forms.

Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth.

Place the dough in a lightly greased bowl, cover with a towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).

Roll out the dough on a floured surface to 1/2 inch thick. Cut into squares or triangles. Carefully drop the dough pieces into the hot oil and fry for 2-3 minutes, or until golden brown.

Remove the beignets with a slotted spoon and place them on a paper towel to drain excess oil. Dust with powdered sugar while they’re still warm.
