# Ingredients:

01 - 2 garlic cloves, finely chopped
02 - 1 tablespoon of olive oil, split
03 - 12 oz of egg pasta
04 - ½ cup each of red, orange, and yellow bell pepper, thinly sliced
05 - 1 lb of Italian-style sausage
06 - ¼ cup onion, sliced thin

08 - 1 teaspoon dried Italian herb mix
09 - ½ cup cooking white wine
10 - Fresh parsley, 2 tablespoons, chopped fine
11 - ½ teaspoon chili flakes for heat
12 - Fresh black pepper, based on preference
13 - 1 can (28 oz) tomatoes, diced and liquid included

# Steps:

01 - Start by heating half the olive oil in a big skillet or Dutch oven over medium-high heat. Put in the sausage and let it brown, breaking it apart into small bits. Once it's thoroughly cooked, take the sausage out of the pan but leave any drippings behind.
02 - Pour in the other half of the olive oil to the same pan. Toss in the bell peppers, onion, and garlic, and cook them for about 3 minutes. Keep stirring until they smell great and look soft.
03 - Add the white wine to the pan and scrape up any crunchy bits from the bottom. Let it cook for about 2 minutes, or until most of the wine is gone.
04 - Mix in the diced tomatoes (juice and all), the seasoning mix, chili flakes, salt, and pepper. Give it a good stir so it all blends well. Let it simmer gently for about 10 minutes so the flavors come together nicely. Toss the sausage back in, add parsley, and let it warm up for another 5 minutes.
05 - While the sauce simmers, cook your noodles based on the instructions on their package. Don’t forget to drain them well once they’re cooked to al dente.
06 - Throw the cooked noodles into the pan with your sauce and sausage mix. Toss until the noodles are evenly coated. Dish it out warm, and if you want, sprinkle some parsley on top for garnish.
