In a large skillet over medium heat, cook bacon until crispy, about 8 minutes. Transfer to a paper towel-lined plate to drain.

Pour off all but 2 tablespoons of bacon grease from the skillet, then add shallots. Cook until soft, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds.

Add white wine to the skillet and cook until reduced by half.

Add heavy cream to the skillet and bring to a boil. Reduce heat to low and stir in Parmesan cheese. Cook until the sauce has thickened slightly, about 2 minutes.

Add zucchini noodles to the skillet and toss until completely coated in the sauce. Remove skillet from heat and stir in cooked bacon.
