Zoodle Alfredo With Bacon (Print Version)

Zucchini noodles tossed in creamy Parmesan sauce with bacon, garlic, and a splash of white wine.

01 - 0.5 lb bacon, chopped
02 - 1 shallot, chopped
03 - 2 cloves garlic, minced
04 - 0.25 cup white wine
05 - 1.5 cups heavy cream
06 - 0.5 cup grated Parmesan cheese, plus more for garnish
07 - 16 oz container zucchini noodles
08 - Kosher salt
09 - Freshly ground black pepper

# Steps:

01 - In a large skillet over medium heat, cook bacon until crispy, about 8 minutes. Transfer to a paper towel-lined plate to drain.
02 - Pour off all but 2 tablespoons of bacon grease from the skillet, then add shallots. Cook until soft, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds.
03 - Add white wine to the skillet and cook until reduced by half.
04 - Add heavy cream to the skillet and bring to a boil. Reduce heat to low and stir in Parmesan cheese. Cook until the sauce has thickened slightly, about 2 minutes.
05 - Add zucchini noodles to the skillet and toss until completely coated in the sauce. Remove skillet from heat and stir in cooked bacon.
