# Ingredients:

01 - 1 heaping tablespoon sugar-free peanut butter
02 - 1 large extra-large egg
03 - 2 teaspoons cocoa powder
04 - 2 teaspoons monkfruit sweetener, optional
05 - Pinch of salt
06 - 1 1/2 tablespoons sugar-free semi-sweet chocolate chips, divided
07 - 1-2 teaspoons water, as needed

# Steps:

01 - Combine peanut butter, egg, cocoa powder, salt, sweetener, and 1 tablespoon of chocolate chips. Add 1-2 teaspoons of water if the mixture is too thick.
02 - Preheat a mini waffle maker according to the manufacturer's instructions.
03 - Add half of the mixture to the waffle maker. Top with half of the remaining chocolate chips and cook for 2-3 minutes, or until no steam is emitting from the machine.
04 - Repeat the process with the remaining batter and chocolate chips.
