Cheesy Protein Egg Bites (Print Version)

# Ingredients:

01 - ½ cup cheddar cheese, shredded
02 - 1 cup of cottage cheese
03 - 8-9 eggs, large
04 - ⅛ teaspoon black pepper
05 - ¼ teaspoon salt

06 - Chives, 2 tablespoons, chopped optional
07 - ⅓ cup crispy bacon, cooked optional

# Instructions:

01 - Pre-heat your oven to 350°F and give a silicone muffin tray a light coating of spray oil.
02 - Toss the eggs, shredded cheese, cottage cheese, salt, and pepper into your blender. Blend until you get a smooth liquid.
03 - Pour the blended egg mix into your muffin pan cups, keeping them a bit over halfway full. Toss on bacon, chives, or even other toppings, if you like.
04 - Pop the tray in the oven for about 20-22 minutes. Once it's done, let the bites cool slightly before removing them.
