Combine olive oil with panko. Heat in microwave for 2-4 minutes until lightly golden, then set aside to cool.

Beat the eggs with flour, mayo, mustard, Old Bay, some salt, and a pinch of pepper.

First, dip each piece of fish in the egg mixture. Then coat with panko and gently shake it to remove extra crumbs.

Set air fryer to 400°F and cook for 10-12 minutes, flipping halfway through. Spray with oil if it’s not browning well.
