Crispy Fish Sticks (Print Version)

Crunchy fish sticks using an air fryer. A cleaner twist on frozen packs.

# Ingredients:

→ Brine

01 - 6-8 cups Chilled Water
02 - 1/4 cup of Salt

→ Fish and Coating

03 - 1 ½ pounds of White Fish (like Cod, Tilapia, Halibut, or Haddock)
04 - 2 tablespoons of Olive Oil
05 - 2 cups of Panko Breadcrumbs
06 - 1/4 cup of Regular Flour
07 - 2 Large Eggs

→ Seasonings

08 - 2 tablespoons Dijon Mustard
09 - 1/4 cup of Mayo
10 - 1/8 teaspoon Ground Pepper
11 - 1 tablespoon of Old Bay
12 - 1/8 teaspoon Fine Salt

# Steps:

01 - In a large bowl, stir together salt and water. Let the fish soak in the brine for a quarter-hour.
02 - Combine olive oil with panko. Heat in microwave for 2-4 minutes until lightly golden, then set aside to cool.
03 - Beat the eggs with flour, mayo, mustard, Old Bay, some salt, and a pinch of pepper.
04 - First, dip each piece of fish in the egg mixture. Then coat with panko and gently shake it to remove extra crumbs.
05 - Set air fryer to 400°F and cook for 10-12 minutes, flipping halfway through. Spray with oil if it’s not browning well.

01 - Slice fish into 4-inch sections
02 - Cook in batches to ensure a single layer
03 - Oil the basket to avoid fish sticking
