Set your oven to 375°F (190°C) and line a baking tray with parchment paper to make cleanup easy.

Place the tortillas flat on a clean surface. Smear about 1/4 cup pizza sauce across the center of each, leaving the edges sauce-free.

Evenly scatter 1/2 cup mozzarella cheese on top of the pizza sauce over each tortilla.

Layer the mushrooms, peppers, olives, and pepperoni evenly on all the tortillas.

Sprinkle Italian seasoning over the toppings, and if you like it spicy, toss in a pinch of red pepper flakes.

Fold in the edges, then roll each tortilla tightly from the bottom up, keeping the fillings secure inside. Place seam-side down on the baking tray.

Brush a little olive oil on all sides of each roll. This helps them get crispy and golden.

Pop the tray in the oven and let them bake for 12 to 15 minutes, or until they're golden and the cheese is melted inside.

Take them out of the oven and let them rest for a couple of minutes so the filling firms up and they're easier to handle.

Cut each wrap in half diagonally with a sharp knife. Serve instantly with extra pizza sauce for dipping.
