Easy Cheesy Eggs Chili Butter (Print Version)

Fluffy eggs, cheddar cheese, chili butter, avocado, and toast unite for a quick, hearty breakfast.

# Ingredients:

→ Chili Butter

01 - 1 tablespoon extra virgin olive oil
02 - 2 tablespoons salted butter
03 - 1 clove garlic, chopped
04 - 1-2 teaspoons chili flakes or Aleppo pepper
05 - 1/2 teaspoon paprika

→ Eggs

06 - 4 large eggs
07 - 1/2 cup finely shredded cheddar cheese
08 - Sea salt, to taste
09 - Black pepper, to taste
10 - 2 slices sourdough or whole grain bread, toasted
11 - 1 small avocado, lightly mashed
12 - Fresh herbs, for topping (optional)

# Steps:

01 - In a saucepan, melt together the olive oil, butter, garlic, chili flakes, and paprika. Allow the butter to bubble and slightly brown, then remove from heat.
02 - Place the eggs in a medium pot and cover with water by 1 inch. Bring to a boil over high heat, then cover and remove from heat. Let sit for 5 minutes for a softer yolk or 10 minutes for hard-boiled.
03 - Drain the eggs, peel, and slice into quarters. Add them to a bowl with the grated cheddar cheese and season with sea salt and black pepper. Use a fork to lightly mash the eggs and cheese together.
04 - Spread the mashed avocado onto the toasted bread. Spoon the egg mixture over the avocado and drizzle with chili butter. Top with fresh herbs, if desired.
