Fresh Spinach Lemon Garlic (Print Version)

Quick sautéed spinach with garlic, olive oil, and lemon, perfect for pairing with grilled meats or vegetarian mains.

# Ingredients:

01 - 2 tablespoons olive oil
02 - 16 oz fresh spinach
03 - 3 garlic cloves, minced
04 - ¼ whole lemon, freshly squeezed juice
05 - 2 tablespoons lemon zest
06 - Salt, to taste
07 - Fresh cracked pepper, to taste

# Steps:

01 - Heat olive oil in a skillet over medium heat. Add minced garlic when the oil is hot and sauté for about 1 minute, stirring constantly to prevent burning.
02 - Add spinach a handful at a time, stirring constantly, and add more spinach as it wilts. Cook uncovered on medium-high heat for about 1 minute or until just wilted.
03 - Remove skillet from heat and cover it. Let spinach sit for 2-3 minutes, then uncover and mix well.
04 - Squeeze fresh lemon juice over the spinach, using about a quarter of a lemon. Stir to combine, then season with salt and cracked pepper to taste. Top with lemon zest and serve.

01 - Do not overcook spinach; it should be just wilted for the best results.
02 - Avoid using bottled lemon juice as it is too acidic compared to fresh lemon juice.
