Heat olive oil in a skillet over medium heat. Add minced garlic when the oil is hot and sauté for about 1 minute, stirring constantly to prevent burning.

Add spinach a handful at a time, stirring constantly, and add more spinach as it wilts. Cook uncovered on medium-high heat for about 1 minute or until just wilted.

Remove skillet from heat and cover it. Let spinach sit for 2-3 minutes, then uncover and mix well.

Squeeze fresh lemon juice over the spinach, using about a quarter of a lemon. Stir to combine, then season with salt and cracked pepper to taste. Top with lemon zest and serve.
