Add vegetable oil, chopped garlic, and ⅛ teaspoon salt into a medium sauté pan. Place the pan over medium heat and cook for 1-2 minutes until the garlic turns golden brown. Remove the garlic, leaving the garlic-infused oil in the pan.

Add the egg to the pan with the garlic-infused oil and scramble until partially cooked.

Add cooked rice, chopped scallion, soy sauce, oyster sauce, black pepper, and the remaining salt to the pan. Turn the heat to high and mix to combine thoroughly.

Stir in the reserved fried garlic and mix well. Taste and adjust seasoning with additional salt, pepper, or soy sauce, if needed.

Garnish with additional chopped scallions and serve immediately.
